Grain fed veal, The marrow bones can be cut in three different ways (A) marrow bone as grown between 30cm to 35cm with code 16937 (B) marrow bone cut in 2 pieces, each piece is between 12cm to 17cm with code 16952 (C) marrow bone cut in smaller pieces- pipe bones- of 3cm to 6cm. Veal marrow bones are used to create rich, thick veal stocks, soup bases, and sauces like veal demi-glace.
